Coffee production in Ethiopia is long lasting tradition which dates back dozens of centuries. Planting can be divided into three types: 1.Forest coffee (mostly Southwest of country) 2.Garden coffee 3.Plantation coffee Sidamo coffee is unique not only because of the flavor and fragrance, but also because of its ripening method. Ripening occurs in lower temperature than most other beans; which accounts for the sweet flavor and the slightly acidic, fruity aroma.
